Ингредиенты

  • 1/2 c. Extra virgin olive oil
  • 2 lrg Onions , finely minced
  • 2 x Cloves garlic, peeled and finely minced
  • 2 lrg Ribs celery, finely minced
  • 2 x Green peppers, seeded and minced
  • 2 quart Peeled, seede and minced fresh tomatoes, about 10 c. minced
  • 2 can (6 ounce.) tomato paste
  • 1 c. Beef broth
  • 2 x Bay leaves crumbled Salt and freshly grnd pepper
  • 2 Tbsp. Minced fresh basil Or possibly 2 Teas. dry
  • 2 tsp Minced fresh thyme Or possibly 1 Teas. dry
  • 1 tsp Minced fresh oregano Or possibly 1/2 Teas. dry

Инструкции

  1. Heat the oil in a kettle and saute/fry yhe onions slowly till golden brown. Add in the celery, garlic and green pepper and cook for 2 min longer.
  2. Add in the tomatoes, tomato paste, beef broth, bay leaves, salt and pepper to taste. Bring to a boil and simmer uncovered fr 30 min or possibly till oil is visible around the sides of the kettle.
  3. Add in the basil, thyme and oregano and simmer for 5 min longer. Pass through a food mill if a smooth sauce is desired. Set kettle in a bucket of ice to cold quickly. When lukewarm, fill qt or possibly pint freezer containers, cover, label and refrigeratein refrigerator. Freeze.
  4. Makes about 5 pints.
  5. This is a good basic recipe which you can add in to as needed.
