  • 1 pkt fat-free cream cheese - (8 ounce)
  • 1 c. fat-free lowfat sour cream
  • 2 1/2 tsp Equal for Recipes (or possibly 8 packets Equal sweetener or possibly 1/3 c. Equal Spoonful)
  • 2 tsp lemon juice - (to 3)
  • 1 c. coarsely-minced fresh or possibly canned peaches
  • 1 c. fresh or possibly frzn blueberries
  • 1 c. fresh or possibly unsweetened frzn raspberries (or possibly halved or possibly quartered strawberries
  • 1 c. cubed fresh or possibly canned pineapple in juice
  • 1 can Mandarin orange segments - (11 ounce) liquid removed
  • 12 x pecan halves (optional)

  1. Beat cream cheese, lowfat sour cream, Equal and lemon juice in medium bowl till smooth; gently fold in fruit.
  2. Spoon mix into 12 paper-lined muffin c., or possibly spread in baking dish, 10 by 6 inches. Garnish with pecan halves and additional fruit, if you like. Freeze till hard, 6 to 8 hrs. Let stand at room temperature till slightly softened, 10 to 15 min, before serving.
  3. This recipe yields 12 servings.

Comments: If made in a 10 by 6-inch baking dish, cut into squares and serve on lettuce-lined plates as a salad, or possibly on plates with a pureed strawberry or possibly raspberry sauce for dessert. The fruit mix can be spooned into hollowed-out orange halves and frzn. Cut thin slice from bottom of orange halves so they will stand; place in muffin tins to freeze.
