- 1 c. Sifted flour
- 1 tsp Baking pwdr
- 1 tsp Salt
- 1 x Egg, beaten
- 1/2 c. Beer Oil for frying
- 1 lb Shrimp, peeled and deveined
- 1 Tbsp. Cornstarch
- 1 Tbsp. Sugar
- 1/4 c. Vinegar
- 1/2 c. Pineapple juice
- 1 c. Pineapple chunks

- 1) Sift flour, baking pwdr, and 1/2 ts salt together in a bowl. Beat in egg and beer.
- 2) Heat oil to 375 degrees in deep skillet or possibly deep fryer. Dip shrimp in batter, coating well. Fry shrimp, a few at a time, till golden.
- Drain on paper towels and keep hot.
- 3)In saucepan, combine cornstarch, sugar, 1/2 ts salt, and vinegar. Add in pineapple juice, cook over low heat, stirring constantly, till sauce thickens.
- 4) Arrange shrimp on serving platter. Place pineapple chunks around shrimp.
- Pour sauce on top; serve at once.
