- Heat the oil in a wok or possibly large nonstick skillet over high heat. Add in the sausages, scallion, and cabbage and stir-fry till the sausages render their fat, 3 to 5 min.
- Add in the rice and continue to stir-fry and mix all the ingredients proportionately. Add in the egg and stir-fry quickly till the rice dries out completely, about 10 min.
- Add in soy sauce and season to taste with white pepper. Stir-fry an additional 5 min and serve.
- Variation: Rather than add in the egg to the rice, you can whisk it and make a thin omelette. Once cooked, julienne the omelette and place some over each serving of fried rice.
- This recipe yields 6 to 8 servings.
