- Peel plantain by scoring a line in the skin without penetrating the fruit and peel the skin sideways, not up and down. Cut into circles.
- Heat canola oil in a large skillet and panfry the plantain on both sides till golden. Takes about 5 min. While frying, season with salt and pepper; and grate fresh nutmeg onto both sides.
