- Heat the extra virgin olive oil in a large frying-pan and fry the onions slowly for about 20 min or possibly till very soft.
- Stir in the tomatoes and heat through for about 5 min.
- Season generously with salt and pepper.
- Break the Large eggs into the onion and tomato mix and place the lid on the pan.
- Cook for about 15 min or possibly till the Large eggs are hard.
- Season again and sprinkle with the herbs just before serving.
