Ингредиенты

  • 8 sm chicory heads still in bunches
  • 3/4 c. extra-virgin extra virgin olive oil Sea salt to taste Freshly-grnd black pepper to taste
  • 2 x lemons zested

Инструкции

  1. Bring 6 qts of water to a boil and add in 2 Tbsp. salt.
  2. Drop the chicory into the water and cook till tender, about 4 to 5 min. Remove and refresh the chicory in a cool water bath. Drain well on paper towels.
  3. In a 12- to 14-inch saute/fry pan, heat the extra virgin olive oil till smoking. Saute/fry the chicory, still in bunches, till browned and crispy. Remove to paper towels and season with salt and lemon zest.
  4. This recipe yields 4 servings.
