- 1 kg tomatoes
- 1 x bayleaf
- 1 Tbsp. basil, minced
- 2 tsp garlic, crushed
- 1/2 c. orange juice

- Finely chop the tomato flesh.
- Place all ingredients in a saucepan and cover. Genty bring to the boil. Simmer for at least 20 min. Remove lid. Turn heat up slightly. Reduce to thicken, as desired.
- Makes approximately 2 1/2 c..
