- Lightly grease three 9 inch layer pans, dust with flour. Have all ingredients at room temperature. Cream butter and sugar. Add in well beaten large eggs. Add in flour that has been sifted once, then measured, alternately with lowfat milk and beat after each addition till smooth. Add in vanilla and a handful of coconut. Bake for 25 to 30 min at 350 degrees. Allow layers to cool. Then frost with whipped topping and sprinkle with coconut. Chill till served.
