French du Puy green lentils with chicken apple sausage.

Lentil ingredients.
Protein. Chicken apple sausage and apple wood chunks
I used 3 oz of apple wood chunks.
Smoke at 250^ for one hour.
Bring water and lentils to boil.
Simmer uncovered for 20-25 minutes until firm but done.
I served the dish with baby spinach and whole grain mustard. Both are optional
Melt Ghee in large skillet over medium heat.
Saute carrots until al dente.
Add leeks and garlic; saute for 6-8 minutes until tender.
Add lentils, spices, herbs, lemon juice and chicken stock.
Cook until heated completely.
Remove sausage and add to dish.
Serve with a bold red wine and green salad.
