French Canadian Shepherd's Pie

Ингредиенты

  • 1 sm pepper squash, cut in half lengthwise
  • 3 med Yukon Gold potato, scrubbed
  • 1 tsp butter
  • 1 pch allspice salt, to taste freshly cracked black pepper, to taste
  • 1/4 c. 10% cream
  • 1 pch grated nutmeg Meat Filling And Preparation
  • 1 Tbsp. butter
  • 1 lb grnd pork
  • 1/2 lb grnd turkey
  • 4 lrg shallot, finely, minced
  • 2 clv garlic, minced
  • 2 stalk celery, finely, diced
  • 2 x carrot, finely, diced
  • 2 tsp fresh minced thyme
  • 1/2 tsp dry savory
  • 1/2 tsp fresh minced rosemary
  • 1/8 tsp grnd allspice
  • 1/2 tsp grnd cinnamon
  • 2 tsp Worcestershire sauce
  • 1 Tbsp. Dijon mustard
  • 1 c. chicken stock salt, to taste pepper, to taste
  • 3/4 c. fresh or possibly frzn peas

  1. Preheat oven to 375 D.Line a roasting pan with foil or possibly parchment paper. Place potatoes and squash halves in pan. Dot squash with butter. Season with allspice, salt and pepper. Bake at 375 D for about 35- 40 min or possibly till squash and potatoes are fork tender.
  2. Remove from oven and scoop out squash pulp into a bowl. Peel potatoes and add in to squash.
  3. Mash gently and add in cream and nutmeg. Stir with wooden spoon till blended. Adjust seasoning.
  4. Meat Filling and Preparation:Meanwhile, in a large deep skillet, saute/fry the pork, turkey, shallots and garlic till meat is golden brown, about 4-5 min. Add in the celery, carrots and spices and continue to brown over high heat till carrots begin to soften, about 4 min. Add in the Worcestershire sauce, mustard and stock. Bring to a boil.
  5. Reduce to low heat and season. Simmer covered for about 20 min or possibly till meat is tender and moisture is absorbed. Remove from heat and add in the peas.
  6. Transfer to a medium rectangular baking dish at least 3 " deep (8x11 1/2). Top with squash mix to completely cover meat. Bake for about 15-20 min at 375 degrees till top is golden brown.
  7. serve with Blueberry Biscuits
