- Combine ricotta cheese, sugar, lowfat milk, flour, lemon juice, lemon peel, vanilla and salt in a bowl. Beat with electric mixer at medium speed till fairly smooth.
- Add in Large eggs; beat till well combined.
- Pour into pie crust; bake at 350F for 40 min or possibly till center is almost set. Cold completely on wire rack. Cover with dome from graham-cracker crust and chill at least 3 hrs.
