- Cook the onion and garlic in the extra virgin olive oil till soft. Add in the wine, basil, and marjoram. Simmer till most of the liquid evaporates. Add in the tomatoes and simmer 3 min. Place the flounder fillets in the simmering sauce, cover, and cook gently for 2 min - just till fish is hard. Remove fish, add in the lemon juice to the sauce, salt and pepper to taste, and pour over the fish.
