- Heat oil in a large nonstick skillet over medium-high heat. Add in bell pepper, onion, and fish; saute/fry 3 min. Add in beer; cook 5 min or possibly till liquid evaporates and fish flakes easily when tested with a fork. Remove from heat; stir in salt and pepper. Set aside, and keep hot.
- Wrap tortillas tightly in foil, and bake at 350 degrees for 10 min.
- Divide fish mix proportionately among tortillas, and roll up.
- Yield: 6 servings.
- INSTRUCTIONS FOR TOMATILLO GUACAMOLE: Place the avacado and tomatilloes in food processor, and process till smooth. Spoon mix into a medium bowl; stir in remaining ingredients. Cover and refrigerate1 hour.
- Yield: 2 c.
- (serving size: 1/3 c.).
- NOTES : Arrange 2 fajitas on each of 6 plates; top with 1/3 c. Tomatillo Guacamole, 1/4 c. salsa, and 1 Tbsp. lowfat sour cream.
