%20to%20prepare%20the%20enormously%20thick%20filets%20Certified%20Steak%20and%20Seafood%20had%20sent...Reverse%20Searing.%20%20Chris%20also%20suggested%20I%20use%20my%20grill...hahahahaha,%20in%20the%20dead%20of%20winter%20in%20Seattle...like%20I'm%20going%20to%20stand%20on%20my%20deck%20while%20gale%20force%20winds%20whip%20tsunami%20rains%20over%20my%20head!%20%20So%20after%20a%20bit%20more%20research,%20I%20opted%20to%20bake%20and%20sear!%3C/p%3E%3Cp%3EThe%20filets%20were%20almost%20two%20inches%20thick,%20each%20weighing%20about%20a%20half%20a%20pound!%20%20The%20Reverse%20Sear%20is%20truly%20an%20easy%20way%20to%20prepare%20this%20type%20of%20steak%20-%20one%20that%20is%20thick%20and%20needs%20more%20time%20to%20cook%20on%20the%20inside%20than%20it%20does%20on%20the%20outside.%20%20I%20wanted%20these%20steaks%20to%20%22melt%20in%20our%20mouths%22%20-%20and%20that's%20just%20what%20they%20did!%20%20Prime%20Angus%20Beef%20-%20you%20don't%20get%20better%20than%20that!%20%20They%20were%20sweet%20and%20flavorful%20with%20a%20strong%20buttery%20undertone...and%20they%20needed%20nothing%20-%20no%20sauces,%20no%20adornments%20whatsoever...but%20I%20couldn't%20help%20myself%20and%20I%20served%20them%20with%20a%20very%20light%20Gorgonzola%20sauce...Oh.My.Gosh...it%20shouddabeenillegal.%20%20(But%20then%20this%20is%20Seattle%20and%20everything%20is%20legal%20here!)%3C/p%3E%3Cp%3EUsing%20a%20cast%20iron%20skillet,%20I%20was%20able%20to%20put%20the%20steaks%20in%20the%20oven%20so%20I%20could%20bring%20their%20internal%20temperature%20up%20to%20140%20degrees%20(which%20is%20medium%20and%20just%20how%20we%20like%20them)%20in%20about%2020%20minutes,%20allowing%20me%20plenty%20of%20time%20to%20prepare%20a%20nice%20salad.%20%20When%20the%20steaks%20reached%20140%20degrees%20on%20the%20thermometer,%20I%20pulled%20them%20from%20the%20oven%20and%20put%20them%20over%20high%20heat%20on%20the%20stove%20top%20(!)%20to%20sear%20on%20each%20side.%20%20And%20just%20like%20that,%20we%20had%20perfect%20steaks!%3C/p%3E%3Cp%3ELet%20me%20tell%20you%20about%20Certified%20Steak%20and%20Seafood%20Company...they%20sent%20me%20the%20steaks%20and%20some%20fabulous%20Chilean%20Sea%20Bass,%20which%20I'll%20be%20posting%20about%20soon,%20it%20was%20equally%20as%20good%20as%20the%20filets!%20%20Everything%20from%20Certified%20arrived%20frozen,%20which%20meant%20I%20could%20stick%20them%20right%20in%20the%20freezer%20and%20save%20for%20another%20day%20or%20I%20could%20let%20them%20thaw%20and%20use%20immediately.%20%20The%20quality%20of%20their%20products%20is%20amazing%20and%20I%20would%20tell%20you,%20nay,%20implore%20you,%20to%20place%20an%20order%20soon%20for%20your%20next%20special%20occasion%20or%20your%20Valentine%20Feast%20or%20the%20Super%20Bowl!%20%20We%20all%20have%20access%20to%20meat%20at%20our%20local%20grocery%20stores...but%20having%20the%20best%20of%20the%20best%20delivered%20to%20your%20door%20is%20rather%20nice,%20extremely%20convenient%20and%20when%20you're%20guaranteed%20a%20%22happy%20ending%22,%20what%20more%20could%20you%20want?%20%20Right%20now,%20Certified%20Steak%20and%20Seafood%20Company%20is%20offering%20my%20readers%20$25%20off%20your%20entire%20order!!!%20%20Just%20use%20the%20coupon%20code%20below...25%20big%20ones!%20%20Woohoo!!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20300%20degrees.%20%20Bring%20filets%20to%20room%20temperature.%20%20Butter%20a%20cast%20iron%20skillet%20with%201%20tablespoon%20of%20butter.%20%20Place%20filets%20and%20thinly%20sliced%20onion%20in%20skillet,%20season%20with%20salt%20and%20pepper%20to%20taste.%20%20Put%20filets%20in%20oven%20and%20bake%20for%2020%20to%2025%20minutes,%20use%20a%20meat%20thermometer%20to%20check%20internal%20temperature%20of%20meat.%20%20When%20filets%20reach%20140%20degrees,%20for%20medium,%20(135%20for%20medium%20rare,%20145%20for%20well%20done,%20etc.)%20remove%20from%20oven%20and%20place%20on%20stove%20top%20over%20high%20heat.%20%20Sear%20filets%20about%2030%20seconds%20to%20one%20minute%20on%20each%20side.%20%20Remove%20from%20pan%20to%20a%20plate%20and%20tent%20with%20foil%20to%20keep%20warm.%20%20In%20same%20skillet,%20over%20medium%20high%20heat,%20melt%20remaining%20tablespoons%20of%20butter,%20stir%20in%20cream%20and%20Gorgonzola%20cheese%20crumbles,%20stir%20until%20smooth.%20%20Remove%20from%20heat%20and%20serve%20with%20filets.%3C/p%3E%3Cp%3EThe%20mister%20and%20I%20thoroughly%20enjoyed%20every%20bite%20-%20and%20I'm%20not%20sorry%20to%20say%20Caesar%20Beezer%20the%20Wonder%20Dog%20was%20not%20given%20even%20the%20tiniest%20of%20tastes%20-%20it%20was%20just%20too%20good%20to%20share%20with%20the%20dog!%3C/p%3E%3Cp%3EI'm%20sold%20-%20100%25%20sold.%20%20I've%20never%20had%20a%20better%20steak.%20%20Never.%20%20On%20some%20of%20the%20literature%20I%20received%20with%20my%20filets,%20it%20said,%20%22Certified%20Steak%20and%20Seafood%20Company.%20Restaurant%20Quality,%20Internet%20Prices%22...I%20would%20have%20to%20disagree%20with%20that%20statement...because%20
