- Combine 2 c. water and sugar in heavy medium saucepan. Bring to boil over medium-high heat, stirring till sugar dissolves. Stir in honey. Scrape in seeds from vanilla bean; add in bean. Add in figs and bring to boil. Reduce heat to medium-low; cover and simmer 15 min.
- Add in dry tart cherries; cover and simmer till figs and dry cherries are tender, about 10 min longer. Transfer fig mix to bowl. Refrigeratetill cool, about 3 hrs. (Fig mix can be made 1 day ahead. Cover and keep refrigerated.) Throw away vanilla bean. Divide fig mix among 6 bowls. Top each serving with dollop of yogurt, if you like. Sprinkle with pistachios.
