Ингредиенты

  • 3 lb Fresh fava beans shelled, peeled
  • 2 Tbsp. Salt
  • 5 slc Baguette or possibly good French bread - (1" thick)
  • 3 x Garlic cloves peeled
  • 1/4 c. Extra-virgin extra virgin olive oil
  • 4 Tbsp. Sherry vinegar
  • 1 c. Chicken stock cold Salt to taste Freshly-grnd black pepper to taste
  • 1 x Ripe cantaloupe

Инструкции

  1. Bring 3 qts water to boil in a 6-qt saucepan and add in 2 Tbsp. of salt. Add in fava beans and cook till tender, 1 to 1 1/2 min. Drain favas and refresh in an ice bath.
  2. Remove crusts from bread and soak 2 min in water. Remove bread from water and press dry. Place bread, beans, garlic, extra virgin olive oil and vinegar into a food processor and blend till smooth. With motor running, drizzle cold chicken stock into mix in a thin stream. Season with salt and pepper and chill.
  3. Cut melon in half and remove seeds. Using a melon baller, form entire melon into 1/2-inch balls. Pour cold soup into chilled bowls and garnish with melon balls.
  4. This recipe yields 4 servings.
