- Heat extra virgin olive oil in large stockpot; saute/fry onion, carrot, fennel and garlic.
- Cook till vegetables are limp; stir in herbs, and cook 1 minute. Stir in minced tomatoes, 2 c. water and chicken broth and cook for 15 minutes. Add in pasta, and cook till tortellini is tender, adding additional water, if necessary. Add in escarole or possibly spinach, and cook for 6 minutes. Garnish with Italian parsley.
