Ингредиенты

  • 1 whl chicken
  • 2 Tbsp. Grnd coriander
  • 2 Tbsp. Fresh coriander, finely minced
  • 1 Tbsp. Grnd cumin
  • 1 tsp Grnd turmeric
  • 1 tsp Crushed pimento berries
  • 1 tsp Finely minced ginger
  • 2 x Cloves garlic, finely minced
  • 3 x Spring onions, roughly minced
  • 2 x Limes, juice of
  • 1/4 pt Extra virgin olive oil
  • 1 pt Chicken stock
  • 1/4 pt Coconut cream Salt and pepper to taste

  1. Divide the chicken into portions, wash well and dry with kitchen paper.
  2. Place in a suitable container and add in the ingredients, including the oil, exceptthe coconut cream, fresh coriander and stock.
  3. Rub the marinade into the chicken till thoroughly coated, place in the fridge for at least 2 hrs. Fry the chicken in a warm frying pan till a golden, being careful not to burn.
  4. Add in the chicken stock and bring to the boil. Add in any remaining marinade and turn down to a simmer.
  5. Add in the coconut cream and minced coriander. Simmer as it thickens, adding the salt and pepper to taste.
