.%20%20Can%20you%20add%20chicken%20or%20beef?%20Of%20course%20you%20can.%20%20But%20I%20wanted%20to%20make%20my%20version%20of%20Entomatadas%20as%20close%20as%20the%20one's%20from%20my%20beloved%20restaurant.%3C/p%3E%3Cp%3EFor%20Cinco%20de%20Mayo,%20I%20found%20that%20Roma%20tomatoes%20and%20Jalapenos%20were%20plentiful%20and%20on%20sale.%20I%20bought%20Medium%20Cheddar%20Cheese%20and%20Monterey%20Jack.%20%20I%20did%20a%20little%20internet%20surfing%20and%20found%20a%20sparse%20selection%20of%20Entomatada%20recipes.%20I%20didn't%20like%20many%20of%20them,%20because%20I%20didn't%20want%20to%20add%20Chicken%20Bouillon%20or%20chicken%20stock.%20%20I%20didn't%20want%20to%20add%20all%20kinds%20of%20chili,%20or%20I'd%20be%20right%20back%20to%20a%20more%20traditional%20enchilada%20sauce.%20%20I%20wanted%20to%20be%20a%20tomato%20purist,%20and%20I%20didn't%20want%20too%20many%20spices%20to%20mute%20the%20star%20of%20the%20show.%3C/p%3E%3Cp%3EI%20decided%20to%20broil%20four%20Roma%20tomatoes,%20garlic,%20onion%20and%20one-half%20a%20de-seeded%20jalapeno%20for%20five%20minutes.%3C/p%3E%3Cp%3EI%20debated%20whether%20or%20not%20to%20leave%20the%20tomato%20skin%20on,%20since%20I'm%20going%20to%20be%20buzzing%20this%20in%20my%20blender.%3C/p%3E%3Cp%3EWhy%20not?%20The%20skin%20slipped%20right%20off!%3C/p%3E%3Cp%3EFor%20seasoning,%20I%20added%20one%20teaspoon%20of%20coarse%20salt%20and%201/2%20teaspoon%20of%20cumin.%3C/p%3E%3Cp%3EI%20cut%20some%20fresh%20cilantro%20(3%20or%204%20sprigs)%20from%20our%20herb%20garden,%20added%20bit%20of%20black%20pepper%20and%20got%20ready%20for%20some%20pureeing%20action.%3C/p%3E%3Cp%3Epureed%20those--%20that%20would%20be%20a%20total%20of%208%20Roma%20Tomatoes.%20Perfect!%3C/p%3E%3Cp%3ETo%20make%20the%20enchiladas%20sauce%20takes%20about%2010%20minutes.%20Don't%20you%20love%20it?%20!%20The%20entomatadas%20are%20just%20as%20quick%20to%20make:%20using%20a%20non-stick%20skillet,%20I%20added%20a%20small%20amount%20of%20vegetable%20oil%20(like%20a%20teaspoon...maybe%20two).%20%20Corn%20tortillas%20(not%20flour)%20were%20cooked%20for%20about%2030%20seconds--%20just%20enough%20to%20soften%20them,%20but%20not%20make%20them%20crispy.%3C/p%3E%3Cp%3EA%20little%20of%20the%20tomato%20sauce%20is%20poured%20on%20the%20bottom%20of%20an%20oven-proof%20dish.%20%20Fill%20a%20corn%20tortilla%20with%20a%20little%20cheese,%20and%20add%20a%20little%20freshly%20onion--%20or%20leave%20out%20the%20onion,%20if%20you%20prefer.%3C/p%3E%3Cp%3EPour%20a%20little%20sauce%20on%20top...%3C/p%3E%3Cp%3EQueso%20Fresco%20would%20be%20a%20perfect%20cheese%20to%20garnish%20on%20top,%20but%20I%20didn't%20have%20any.%20No%20biggie.%20I%20used%20the%20same%20cheese%20on%20top%20as%20I%20had%20stuffed%20on%20this%20inside.%20%20These%20are%20baked%20at%20350F%20for%2020-30%20minutes,%20until%20bubbly%20and%20hot.%3C/p%3E%3Cp%3EThe%20sour%20cream%20garnish%20is%20truly%20a%20must.%20If%20I%20had%20fresh%20avocado,%20that%20would%20have%20been%20a%20nice%20touch.%3C/p%3E%3Cp%3EI%20didn't%20make%20homemade%20refried%20beans%20(and%20I%20won't%20eat%20canned%20refried%20beans...%20yuck!)%20Instead,%20I%20made%20a%20healthy%20green%20salad%20which%20was%20delicious--%20but%20next%20time,%20I'm%20definitely%20make%20rice%20and%20beans%20to%20go%20with%20this.%20Oh,%20and%20a%20margarita,%20too.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Sha-Zam!%20%20Seriously,%20I%20nailed%20it%20and%20I%20am%20thrilled.%20%20I%20loved%20the%20tomato%20sauce,%20which%20was%20bright%20and%20fresh%20tasting.%20The%20sauce%20was%20flavorful%20and%20mild,%20with%20a%20gentle%20heat%20of%20the%20jalapeno.%20I%20had%20to%20add%20just%20a%20bit%20more%20salt,%20but%20the%20cumin%20was%20subtle%20and%20just%20right.%20%20%20I%20am%20not%20a%20fan%20of%20any%20canned%20enchilada%20sauce%20that%20I've%20ever%20tried.%20%20I%20find%20that%20it's%20got%20an%20overwhelming%20flavor%20of%20chili%20powder%20that%20I%20just%20don't%20care%20for.%20I'm%20working%20on%20perfecting%20my%20own%20homemade%20enchilada%20sauce.%20However,%20I%20still%20prefer%20Entomatadas,%20any%20day,%20because%20I%20love%20the%20flavor%20of%20tomato.%20%20The%20gooey%20cheese,%20and%20onions%20are%20very%20much%20like%20my%20Tex%20Mex%20Chili%20Gravy%20enchiladas--%20except%20a%20much%20more%20pronounced%20tomato.%20%20I%20guess%20the%20theme%20here%20is%20TOMATO!%3C/p%3E%3Cp%3EI%20had%20plenty%20of%20leftover%20sauce,%20since%20I%20only%20made%20two%20casserole%20servings.%20%20The%20very%20next%20day,%20I%20made%20the%20rest%20of%20the%20Entomadas%20and%20polished%20off%20the%20sauce.%20%20I%20loved%20it%20just%20as%20much.%20%20My%20husband%20loved%20them,%20too.%20This%20is%20a%20great%20vegetarian%20meal,%20to%20boot.%3C/p%3E%3Cp%3EIf%20you%20love%20Mexican%20food,%20I%20hope%20you%20try%20this%20authentic%20Mexican%20dish.%20It%20might%20be%20a%20bit%20obscure,%20but%20it's%20a%20gem%20of%20a%20dish.%20%20Trust%20me!%3C/p%3E%3Cp%3EHere's%20the%20recipe:%3C/p%3E){kind=link}
