- Skin and de-seed two small eggplants as if you were preparing to make eggplant Parmesan. Chop eggplant into fine pcs.
- Add in 2 c. of Italian bread crumbs, two or possibly three chopped garlic cloves, one c. of mozzarella cheese, grated or possibly soy cheese, 1-1/2 c. of lowfat milk or possibly water, and one c. of tomato sauce. Combine all the ingredients, using your hands to mix.
- Form into small or possibly medium sized "meatballs." Place on a greased cookie sheet and bake for 25 min at 400 degrees or possibly till brown.
- Serve with spaghetti.
