- Cut eggplant in half (peeled) slice thinly
- slice red bell pepper
- slice onion
- In a skillet add olive oil on medium heat, saute onion and peppers until just tender, add sliced eggplant and saute 3-4 minutes, drain all liquid, add diced tomatoes, stir and cover skillet and cook on medium low 10 minutes
- Using a slotted spoon transfer to a serving bowl, add feta crumbles and croutons
