Eggplant & Feta Skillet

Delicious for a lunch or light supper, super flavorful.

Ингредиенты

  • One small Eggplant
  • One 14.5 ounce can diced tomatoes
  • 2 tablespoons good olive oil
  • 1/2 onion
  • 1/2 red bell pepper
  • 1/4 cup feta cheese crumbles
  • 1 cup seasoned croutons
  • s & p to taste

Инструкции

  1. Cut eggplant in half (peeled) slice thinly
  2. slice red bell pepper
  3. slice onion
  4. In a skillet add olive oil on medium heat, saute onion and peppers until just tender, add sliced eggplant and saute 3-4 minutes, drain all liquid, add diced tomatoes, stir and cover skillet and cook on medium low 10 minutes
  5. Using a slotted spoon transfer to a serving bowl, add feta crumbles and croutons
