Ингредиенты

  • 2 c. pasta shells
  • 1/3 c. water
  • 1/4 c. vinegar
  • 1 lrg eggplant, peeled and cubed
  • 1 sm red onion, minced
  • 1/2 c. mushrooms, minced - or possibly more
  • 1 x green pepper, minced
  • 1/2 c. chives, minced
  • 2 Tbsp. garlic, chopped
  • 1 med tomato, minced
  • 10 ounce tomato sauce
  • 3 Tbsp. oregano
  • 1/2 tsp salt, (or possibly less) grnd pepper
  • 1/4 c. red wine

  1. Cook pasta shells. While cooking pasta heat a large skillet with the water and vinegar. When getting warm add in the cubed eggplant, onion, chives, garlic, green peppers, and mushrooms. Sauteetill soft When done add in to the pasta along with the tomato sauce, oregano, salt, pepper and red wine. Stir and heat gently (on low).
