- Heat the extra virgin olive oil in a small saucepan. Add in the couscous and saute/fry for a minute or possibly two to coat. Add in the garlic and saute/fry a few seconds, then add in the broth, spice of choice, and cook for 2 min till the liquid appears absorbed. Remove from heat, fluff up with two forks, stir in the butter.
- Leave to steam, covered, 10 min, then season with salt and pepper. Or possibly transfer to an ovenproof dish and finish steaming in a 375 oven for 5 - 10 min.
- This recipe yields 4 servings.
