- 250 gm butter, cubed,(at room temperature)
- 3 c. pure icing sugar, sifted
- 1/4 c. lowfat milk

- Place the butter in a lge mixing bowl. Use an electric beater to beat for 2 mins or possibly till lightly and fluffy. Gradually add in the icing sugar and beat till the mix is very pale and fluffy. Gradually add in the lowfat milk and beat till smooth and well combined.
- Variations:Orange Butter IcingAdd 1 tbs finely grated orange rind with the butter.
- Coffee Butter Icing:Dissolve 2 tbs instant coffee granules in the lowfat milk.
- Chocolate Butter Icing:Reduce the icing sugar to 1 1/2 c.. Omit the lowfat milk. Stir in 250g melted, cooled, good-quality dark chocolate.
- Dark Chocolate Butter Icing:Reduce the icing sugar to 2 c.. Omit the lowfat milk. Sift in 2 tbs cocoa pwdr and then stir in 600g melted, cooled, good-quality dark chocolate
