  • 200 gm Self-raising flour, (7oz)
  • 1 tsp Grnd cinnamon
  • 40 gm Soft brown sugar, (1 1/2 ounce)
  • 50 gm Raisins or possibly chocolate chips, (2oz)
  • 1 med -size egg
  • 250 ml Lowfat milk, (8 floz)
  • 2 Tbsp. Sunflower oil
  • 12 x Paper baking cases

  1. Preheat the oven to 190 C/375 F/Gas Mark 5.
  2. Sieve the flour and cinnamon into a large mixing bowl.
  3. Fold in the brown sugar and raisins, or possibly chocolate chips. Break up any lumps in the sugar with your fingertips.
  4. Break the egg into a jug and beat it with a fork. Then add in the lowfat milk and the oil. Beat again till well mixed.
  5. When you are ready to bake put 12 large paper baking cases into a 12 hole bun tin, ideally with deep, straight sides.
  6. Quickly stir the two mixtures together but be careful not to overbeat. It doesn''t matter if you can still see some flour.
  7. Spoon into the paper cases and bake for 15 min till well risen and golden. Remove from the oven with oven gloves.
  8. NOTES : Delicious breakfast muffins. You can weigh the ingredients out the night before you plan to have these muffins, then just mix and bake in the morning. Eat them while they are still hot.
  9. Makes 12 muffins.
