- 1/4 c. finely-minced onion
- 2 x garlic cloves chopped
- 1 Tbsp. all-purpose flour
- 3/4 c. reduced-fat (2%) lowfat milk
- 2 c. shredded mild or possibly sharp Cheddar cheese (8 ounce)
- 1 pkt cream cheese - (3 ounce) cut into cubes
- 1/2 c. crumbled blue cheese - (2 ounce)
- 1/8 tsp grnd red pepper
- 4 dsh warm pepper sauce - (to 6) Breadsticks and assorted fresh vegetables for dipping

- Heat margarine in small saucepan over medium heat till melted. Add in onion and garlic; cook and stir 2 to 3 min or possibly till tender. Stir in flour; cook 2 min, stirring constantly.
- Stir lowfat milk into saucepan; bring to a boil. Boil, stirring constantly, about 1 minute or possibly till thickened. Reduce heat to low; add in cheeses, stirring till melted. Stir in red pepper and pepper sauce. Pour fondue into serving dish. Serve with dippers.
- This recipe yields 8 (3-Tbsp.) servings.
- Hint: For a special touch, sprinkle fondue with parsley and grnd red pepper.
- Lighten Up: To reduce the total fat, replace the Cheddar cheese and cream cheese with reduced-fat Cheddar and cream cheeses.
