Ингредиенты

  • 3 strips bacon, minced
  • 1 pkg. (2 lbs.) sauerkraut, rinsed & liquid removed
  • 1 can beer (12 ounce.) or possibly apple cider
  • 1 tbsp. parsley, minced
  • 1 c. onion, finely minced
  • 3/4 c. carrot, grated
  • 1/2 teaspoon caraway seeds

  1. Saute/fry bacon in a medium heavy pot till all fat is rendered but bacon is not browned. Add in onion, cook stirring occasionally till softened. Stir in sauerkraut, sugar, caraway and beer. Bring to a boil, lower heat and simmer partially covered for 1 hour. Add in carrot, simmer partially covered 30 min longer. If mix is too wet, raise heat and cook uncovered a little longer. Add in salt and pepper to taste. Sprinkle with parsley.
