- 4 drops sweet almond extract (Use bitter if you can get some, or bitter almond oil, the edible kind â donât put arsenic in your Stollen!)
- 1tbsp Rum
- 1/2 tsp ground cardamom
- 1/2 tsp ground nutmeg
- 2 eggs
- 175g butter
- 250g âQuarkâ (I make my own. Link here)
- 100g dried currants
- 100g raisins
- 100g dried craisins
- 50gm candied ginger/orange peel
- Zest of 1 orange
- 150g ground almonds For the âicingâ:

%20is%20a%20beautiful%20one%20from%20Murasaki%20Shikibu%20or%20Ayako%20@%20Samurai%20Viking%20Cuisine.%20Once%20the%20Stollen%20is%20baked%20you%20need%20to%20let%20it%20mature%20for%202%20%E2%80%93%203%20weeks.%20Leave%20it%20in%20a%20cold%20dry%20room,%20wrapped%20in%20aluminum%20foil.%20If%20you%20don%E2%80%99t%20have%20a%20nice%20cold,%20dry%20room%20%E2%80%93%20you%E2%80%99ll%20have%20to%20let%20it%20mature%20in%20your%20refrigerator,%20in%20which%20case%20wrapping%20it%20up%20in%20Saran%20Wrap%20is%20recommended.%20Typically%20this%20is%20done%20in%20the%20last%20week%20of%20November%20in%20German%20households.%3C/p%3E%3Cp%3EMade%20the%20Stollen%20and%20it%20was%20absolutely%20delicious.%20Used%20the%20changes%20Jamie%20suggested,%20and%20made%20some%20additional%20ones%20like%20substituting%20fruit%20with%20whatever%20I%20had%20on%20hand.%20I%20used%20quark%20which%20I%20made%20at%20home.%20You%20can%20find%20the%20recipe%20here.%20The%20only%20issue%20I%20had%20was%20the%20crumbly%20texture.%20I%20didn%E2%80%99t%20get%20a%20smooth,%20beautiful%20crumb%20like%20the%20one%20Jamie%E2%80%99s%20picture%20had,%20and%20I%20think%20I%20can%20blame%20that%20on%20differences%20with%20oven%20temperatures,%20the%20kind%20of%20flour%20available%20here,%20and%20my%20impatience.%3C/p%3E%3Cp%3EMore%20importantly%20I%20think%20too%20on%20the%20lack%20of%20self%20restraint.%20The%20Stollen%20had%20flooded%20the%20house%20with%20delicious%20warm%20smells,%20and%20I%20just%20couldn%E2%80%99t%20resist%20hacking%20some%20off%20%E2%80%A6%20too%20soon%20maybe.%20The%20timer%20was%20set%20on%2030%20minutes%20once%20the%20loaves%20were%20out%20%E2%80%A6%20At%20the%20buzz,%20I%20was%20there%20with%20my%20bread%20knife.%20Crumbly%20or%20not,%20this%20was%20mighty%20delicious%20stuff!%3C/p%3E%3Cp%3EThere%20is%20an%20interesting%20tale%20about%20Stollen%E2%80%A6%20According%20to%20some%20sources,%20this%20sweet%20bread%20which%20dates%20back%20to%201400%20A.D.,%20used%20to%20be%20much%20more%20boring%20due%20to%20a%20%E2%80%98butter%20ban%E2%80%99%20which%20had%20been%20implemented%20by%20the%20Roman%20Catholic%20Church.%20However%20an%20appeal%20was%20made%20to%20the%20Pope,%20and%20the%20Pope%20decided%20that%20after%20doing%20appropriate%20%E2%80%98penance%E2%80%99%20you%20could%20use%20butter%20and%20milk!%3C/p%3E%3Cp%3EThank%20you%20Ayako%E2%80%A6nom%20nom%20nom.%20My%20first%20Stollen%20was%20made,%20the%20remainder%20of%20which%20was%20soon%20sitting%20wrapped%20in%20foil%20in%20a%20cool%20place.%20Trying%20(seriously%20am)%20to%20leave%20it%202-3%20weeks%20in%20hibernation.%20Am%20trying%20to%20feed%20it%20to%20my%20blog%20meanwhile%E2%80%A6%20With%20temptation%20as%20strong%20as%20this,%20I%E2%80%99m%20back%20with%20news%20that%20it%20now%20slices%20beautifully.%20Yes,%20I%20have%20not%20been%20able%20to%20resist%20temptation%20&%20was%20back%20pulling%20the%20foil%20of%20this%20morning.%20Sliced%20some%20for%20the%20kids%20%E2%80%98tiffin%E2%80%99/snack%20for%20school,%20and%20have%20to%20say%20it%20still%20tastes%20divine.%20Cake%20like,%20rich%20&%20yet%20not%20heavy.%20You%20must%20make%20some%E2%80%A6still%20a%20month%20to%20go%20for%20Christmas!%3C/p%3E%3Cp%3EChristmas%20Stollen%20(Dresden%20Stollen)%3C/p%3E%3Cp%3EThe%20recipe%20is%20from%20%E2%80%98Backen%20macht%20Freude%E2%80%99%20(Dr%20Oetker)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPlace%20the%20flour,%20baking%20powder,%20baking%20soda,%20almond%20meal,%20cardamom%20&%20nutmeg%20in%20your%20processor%20&%20give%20it%20a%20whiz.%3C/p%3E%3Cp%3EAdd%20chilled%20grated%20butter%20&%20process%20till%20you%20have%20breadcrumbs.%3C/p%3E%3Cp%3EIn%20a%20bowl%20whisk%20together%20quark,%20eggs,%20almond%20extract,%20rum%20(if%20using).%3C/p%3E%3Cp%3EAdd%20wet%20ingredients%20to%20flour%20mix%20and%20stir%20together%20until%20all%20the%20dry%20ingredients%20are%20moistened,%20and%20start%20to%20come%20together%20into%20a%20ball%20of%20dough,%20sticky%20but%20workable.%3C/p%3E%3Cp%3EKnead%20on%20a%20well-floured%20work%20surface,%20adding%20just%20enough%20extra%20flour%20until%20it%20forms%20a%20nice,%20soft,%20smooth%20but%20not%20sticky%20dough.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20250%C2%B0C.%20Bake%20it%20for%2045%20minutes%20at%20180%C2%B0C%20and%20then%20for%20another%2015%20minutes%20at%20160%C2%B0C.%20The%20%E2%80%98icing%E2%80%99:%3C/p%3E%3Cp%3EAs%20soon%20as%20the%20Stollen%20is%20done%20brush%20melted%20butter%20onto%20the%20hot%20stollen%20and%20dust%20it%20with%20the%20powdered%20sugar.%3C/p%3E%3Cp%3E%E2%99%A5%20Thank%20you%20for%20stopping%20by%20%E2%99%A5%3C/p%3E%3Cp%3EI%20have%20to%20add%20that%20I%20used%20golden%20raisins%20in%20my%20Stollen%20that%20Madhuli%20mailed%20to%20me%20very%20recently.%20She%20sent%20me%20a%20beautifully%20wrapped%20gift%20&%20I%20was%20so%20touched.%20Each%20bit%20packed%20with%20love,%20a%20separate%20card%20on%20each,%20handwritten%20notes%20&%20even%20a%20recipe%20of%20her%20grandmothers%20with
