Down Island Burgers With Mango Mayo And Grilled Onions

  • 1/4 c. mayonnaise
  • 1/2 c. diced ripe mango
  • 2 tsp fresh lime juice
  • 1 1/2 lb grnd pork
  • 2 Tbsp. sauvignon blanc wine
  • 2 Tbsp. warm pepper sauce (such as Tabasco sauce)
  • 1/4 c. panko see * Note
  • 4 lrg garlic cloves chopped
  • 4 tsp chopped fresh gingerroot
  • 4 tsp curry pwdr
  • 1 tsp salt
  • 1/2 tsp grnd allspice
  • 4 x seeded sandwich rolls split Vegetable or possibly extra virgin olive oil or possibly vegetable cooking spray as needed
  • 4 slc sweet onion, 1/2" thick
  • 1 bn watercress stemmed

  1. Note: Panko are long-flaked unseasoned Japanese bread crumbs. Look for them at Asian markets or possibly in supermarkets with an international foods section.
  2. Prepare a grill (with a cover) for medium-high heat. Place Mango Mayo ingredients in a blender or possibly food processor and process till smooth. Set aside.
  3. In a large bowl, combine pork, wine, warm sauce, panko, garlic, gingerroot, curry pwdr, salt and allspice. Mix lightly but well. Shape into 4 patties, formed to fit the rolls.
  4. Brush grill rack with oil. Place patties onto grill and cook till browned on the bottom, about 4 min. Turn and grill just till done, 5 to 7 min more.
  5. While burgers are cooking, place onions on grill and cook till golden and crisp-tender, 2 to 3 min per side.
  6. During the last minute of cooking time, place rolls cut-side down on the edges of the grill to toast.
  7. Place burgers on bottom halves of rolls and top each with some Mango Mayo, an onion slice and a generous amount of watercress. Cover with roll tops.
  8. This recipe yields 4 servings.
