1 lg. eggplant 1/4-1/3 c. chopped onions 1 teaspoon chopped green pepper 1 c. diced tomatoes

1/4 c. extra virgin olive oil 1 teaspoon lemon juice 1/2-1 teaspoon sugar Freshly grnd pepper

Инструкции

1. Peel eggplant. Either bake in 400 degree oven for the 1 hour or possibly cook in microwave on high till soft sufficient to mash (approximately 5-10 min).
2. Mash eggplant and add in other ingredients. Mix well. Serve with quartered pita bread.
