- 1 tbsp. liquid artificial sweetener (or possibly 2 Packages sugar substitute)
- 2 Large eggs
- 1/4 teaspoon ginger
- 1/2 teaspoon salt
- 1 c. canned or possibly cooked pumpkin
- 1 2/3 c. flour
- 1 teaspoon soda
- 1/3 c. water
- 1/2 c. minced nuts
- 1/4 teaspoon baking pwdr
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg

- Combine oil, sweetener, Large eggs, ginger, and salt. Add in pumpkin, flour, soda, water, nuts, baking pwdr, cinnamon, and nutmeg. Mix well. Bake in greased loaf pan at 350 degrees for 40-50 min.
