- 1/2 c. shortening
- 1 c. sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 3/4 c. flour
- 1/2 c. cocoa
- 1 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1 c. buttermilk or possibly sour lowfat milk (to sour, add in 1 T vinegar to lowfat milk)
- 1/4 c. butter, softened
- 1/4 c. shortening
- 1 c. marshmallow creme
- 1 1/4 c. confectioners sugar
- 1 1/2 teaspoon vanilla extract

- Preheat oven to 375 degrees. Cream shortening and sugar together in large bowl. Add in large eggs and vanilla. Put together dry ingredients well and add in gradually alternating with lowfat milk to sugar/shortening mix.Drop by tablespoonfuls onto lightly greased cookie sheet (try for an even number). Bake for 8-10 min. Cool well.
- Beat butter and shortening till light and fluffy. Gradually add in marshmallow creme, beating well. Add in confectioners sugar and vanilla; beat to spreading consistency. Fill cookies like "Devil Dog" sandwiches with 1 tbsp creme to each 2 cookies.
