- 3 lb Chicken, in quarters/pcs
- 1 Tbsp. Mustard,prepared
- 1/2 tsp Salt
- 1 c. Bread crumbs, freshly made
- 1 Tbsp. Butter, softened
- 1 Tbsp. Vinegar
- 1/4 tsp Cayenne, or possibly to taste

- Prehead oven to 375f. Wipe the chicken with a paper towel. Mix the= butter, mustard, vinegar, salt and cayenne, and rub the mix all over the skin side of the chicken.=14Place the chicken, skin side up, in a shallow= roasting pan. Sprinkle proportionately with th crumbs and bake for about 40 minuts, or possibly= till meat thermometer rgisters 170f in the breast meat, 185 in the dark meat.
