- One thing I did not have was cherry jam (which Joy used), but I did have lots of blackberry jam on hand. (I used freezer jam for this recipe.)
- Dark Chocolate Chip Blackberry Jam Cookies
- Slightly adapted from Joy the Baker
- 2 c. all-purpose flour (I used a fine whole-wheat flour.)
- 1 t. baking powder
- 1/2 t. ground ginger
- 1/4 t. fine sea salt
- 1 stick butter, at room temperature
- 2/3 c. white sugar
- 1 farm fresh egg
- 2 T. 2% milk
- 1/2 t. almond extract
- 1/4 cup of blackberry preserves (I used freezer jam.)
- 1 pkg. dark chocolate chips

%3C/p%3E%3Cp%3EReduce%20the%20mixer%20speed%20to%20low,%20add%20the%20jam%20and%20beat%20for%201%20minute%20more.%20With%20the%20mixer%20still%20on%20low%20add%20the%20dry%20ingredients%20and%20mix%20only%20until%20they%20are%20incorporated.%20You%E2%80%99ll%20have%20a%20very%20thick%20dough.%20%20%20Mix%20in%20chocolate%20chips%20until%20just%20incorporated.%3C/p%3E%3Cp%3EUse%20a%20cookie%20scoop%20and%20scoop%20out%20dough.%20%20%20%20Lightly%20flatten%20each%20cookie.%20%20(Joy%20rolled%20her%20dough%20balls%20in%20sugar%20and%20I%20wish%20I%20would%20have%20done%20this.)%3C/p%3E%3Cp%3EBake%20the%20cookies%20for%2010%20to%2012%20minutes.%20%20%20The%20cookies%20will%20be%20only%20just%20firm,%20fairly%20pale%20and%20browned%20around%20the%20edges.%20Pull%20the%20sheets%20from%20the%20oven%20and%20allow%20the%20cookies%20to%20rest%20for%201%20minute,%20the%20carefully%20transfer%20them%20to%20racks%20to%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3ERepeat%20with%20the%20remainder%20of%20the%20dough,%20cooling%20the%20baking%20sheets%20between%20batches.%3C/p%3E%3Cp%3EAs%20previously%20stated%20in%20the%20recipe,%20I%20definitely%20would%20roll%20these%20in%20sanding%20sugar,%20especially%20for%20holiday%20cookies.%20%20%20%20%20And,%20these%20would%20have%20been%20a%20prettier%20pinkish%20color%20if%20I%20had%20not%20used%20the%20whole%20wheat%20flour.%3C/p%3E%3Cp%3EI%20decided%20to%20try%20this%20same%20recipe%20again%20without%20the%20whole%20wheat%20flour%20to%20see%20if%20I%20could%20get%20a%20prettier%20cookie.%20%20%20%20I%20used%20the%20same%20recipe%20above%20but%20used%20white%20flour%20and%20white%20chocolate%20chips.%20%20%20I%20also%20grabbed%20some%20Blackberry-Lime%20Freezer%20Jam.%20%20%20I%20know%20that%20combo%20sounds%20weird,%20but%20these%20Blackberry-Lime-White%20Chocolate%20Chip%20Cookies%20were%20pretty%20darn%20tasty!%3C/p%3E%3Cp%3EThey%20were%20also%20much%20prettier.%3C/p%3E%3Cp%3EA%20much%20prettier,%20pink%20dough.%3C/p%3E%3Cp%3EI%20also%20rolled%20the%20dough-balls%20in%20sugar%20before%20baking.%3C/p%3E%3Cp%3EBlackberry-Jam%20White%20Chocolate%20Chip%20Cookies%3C/p%3E%3Cp%3EHave%20a%20great%20week!!%3C/p%3E){kind=link}
