  • 3 Tbsp. Coarsely minced peeled gingerroot
  • 1 Tbsp. Minced peeled fresh lemon grass
  • 2 tsp Anchovy paste
  • 1 tsp Grated lime rind
  • 7 x Peeled shallots
  • 5 lrg Garlic cloves
  • 1 med Jalapeno pepper, seeded
  • 1 1/2 tsp Vegetable oil
  • 2 c. Water
  • 3/4 lb Skinned boned chicken breasts, diced
  • 2 c. Broccoli florets
  • 2 c. Choppped zucchini
  • 2 c. Diced tomato
  • 3 Tbsp. Fish sauce
  • 2 Tbsp. Rice vinegar
  • 1 1/2 tsp Sugar
  • 1/4 tsp Crushed red pepper
  • 2 c. Loosely packed torn fresh spinach
  • 4 c. Warm cooked brown rice
  • 2 Tbsp. Minced fresh cilantro

  1. Combine first 7 ingredients in food processor, and process 1 minute or possibly till finely minced, scraping the sides of bowl once.
  2. Heat the oil in a large nonstick skillet over medium heat. Add in the shallot mix; cook 1 minute. Add in water; bring to a boil over medium-high heat, and cook 8 min.
  3. Add in chicken and next 7 ingredients; cook 5 min, stirring occasionally.
  4. Add in the spinach, and cook 5 min, stirring occasionally.
  5. Yield: 4servings (serving size: 1-1/2 c. chicken mix and 1 c. rice).
  6. Serving Ideas : Serve over rice; sprinkle with fresh cilantro.
  7. NOTES : In Thailand, "curry" does not refer to curry pwdr but rather to a spicy blend of mostly fresh ingredients.
