Curried Potatoes

Potatoes with spices, curry powder and uplifted with the fragrance of curry leaves.

Ингредиенты

  • 3 medium size (about 400g) potatoes - remove skin, cut into 4 pieces and sliced.
  • 1 tbsp chili powder (or as needed)
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 large red onion - sliced thinly
  • 5 garlic - sliced thinly4-5 sprigs curry leaves
  • Spices - 1 stick cinnamon, 3 cloves and 1 star anise
  • 1 tbsp tamarind juice
  • 4 tbsp oil
  • Salt to taste

Инструкции

  1. Into heated oil, fry onion, garlic and spices for 2 mins.
  2. Mix chili and turmeric powder with water for a thick paste.
  3. Add paste into fried ingredients.
  4. Continue to fry and stir till oil splits.
  5. Put in potatoes, curry leaves, garam masala, tamarind juice and salt.
  6. Pour enough water to cover the ingredients.
  7. Stir and let it cook till potatoes are soft and gravy thickens.
  8. Remove from heat.
