- 1/2 c. finely minced onion
- 2 Tbsp. butter or possibly margarine
- 2 1/2 c. uncooked long grain rice
- 2 clv garlic, chopped
- 1 Tbsp. curry pwdr
- 5 c. chicken broth
- 1 Tbsp. soy sauce
- 1 x jalapeno pepper, seeded and minced (optional)
- 1 x (20 ounce.) can unsweetened pineapple chunks, liquid removed, Or possibly the equivalent of fresh pineapple
- 4 x green onions, minced

- In a large saucepan, saute/fry onion in butter till tender. Stir in rice, garlic, and curry pwdr. Add in broth, soy sauce and jalapeno, if you like.
- Bring to a boil. Reduce heat; cover and simmer for 20 min. Remove from the heat and let stand for 5 min or possibly till liquid is absorbed. Stir in green onions and pineapple chunks.
