It wouldn't be "Taco Night" without homemade guacamole. I use copious amounts of cilantro in my recipe. I hope you like it as much as we do!

This is a great, light side dish. And it's probably the easiest dish you can possibly make! Perfect with enchiladas or my chicken chilaquiles…
