- 8 strips bacon, diced
- 1/2 c. prepared biscuit mix
- 1/4 c. butter, melted
- 1 c. shredded Cheddar cheese
- 1 1/2 c. lowfat milk
- 3 large eggs
- Dash pepper

- Fry bacon, crisp and crumble and set aside. In blender put together lowfat milk, biscuit mix, large eggs, butter and pepper. Blend for 15 seconds. Pour into greased 9 inch pie plate. Sprinkle bacon and cheese on top of egg mix. Gently press below surface with fork. Bake at 350 degrees for 30 min. Let stand 10 min. Serves 4-6.
