%3C/p%3E%3Cp%3EOur%20friends%20Drew%20and%20Ralph%20--%20characters%20you%20know%20doubt%20recognize%20from%20many%20a%20dinner%20featured%20here%20on%20The%20Bitten%20Word%20--%20have%20just%20opened%20a%20restaurant%20(a%20second%20restaurant,%20technically,%20that%20just%20so%20happens%20to%20be%20very%20favorably%20reviewed%20in%20today's%20Washington%20Post).%3C/p%3E%3Cp%3EAs%20they've%20been%20getting%20the%20new%20eatery%20up%20and%20running,%20they've%20been%20understandably%20busy,%20so%20we%20haven't%20been%20able%20to%20hang%20out%20as%20much.%20To%20make%20up%20for%20lost%20time,%20they%20invited%20us%20to%20come%20over%20to%20their%20house%20for%20brunch%20on%20Sunday.%3C/p%3E%3Cp%3E%22What's%20for%20brunch?%22%20Clay%20casually%20asked%20Drew%20a%20few%20days%20beforehand.%3C/p%3E%3Cp%3E%22We%20saw%20this%20recipe%20in%20the%20latest%20Cook's%20Country%20that%20looks%20awes---,%22%3C/p%3E%3Cp%3E%22The%20Really%20Crunchy%20French%20Toast%20with%20the%20Cap'n%20Crunch?!?!%22%3C/p%3E%3Cp%3EThe%20answer:%20a%20resounding%20yes.%3C/p%3E%3Cp%3EWe'd%20spied%20this%20recipe%20when%20picking%20out%20April%20recipes.%20We%20loved%20the%20idea,%20but%20it%20seemed%20a%20bit%20of%20an%20overindulgence%20to%20just%20make%20for%20the%20two%20of%20us.%3C/p%3E%3Cp%3EBut%20when%20friends%20invite%20you%20over%20for%20a%20French%20toast%20feast,%20you%20don't%20turn%20them%20down.%3C/p%3E%3Cp%3ESo%20we%20didn't%20make%20this%20French%20toast.%20But%20we%20were%20present%20for%20the%20making%20of%20it,%20perched%20on%20stools%20in%20the%20kitchen,%20sipping%20coffee%20as%20Drew%20pieced%20the%20meal%20together.%20And%20that,%20Bittens,%20is%20a%20pretty%20nice%20Sunday%20morning%20if%20you%20ask%20us.%3C/p%3E%3Cp%3EThis%20recipe%20uses%20a%20few%20unusual%20techniques%20to%20produce%20French%20toast%20with%20a%20marvelously%20crunchy%20outside%20and%20a%20soft,%20nearly-creamy%20center.%3C/p%3E%3Cp%3EHere%20are%20the%20tricks:%3C/p%3E%3Cp%3EChallah.%20This%20is%20hardly%20the%20first%20time%20we've%20encountered%20challah%20French%20toast;%20it's%20nearly%20de%20rigeur%20on%20brunch%20menus%20around%20town.%20But%20there's%20good%20reason.%20The%20eggy,%20chewy%20Jewish%20bread%20is%20the%20perfect%20base%20for%20French%20toast.%3C/p%3E%3Cp%3ESpiced%20custard.%20Dip%20your%20bread%20ever%20so%20briefly%20in%20a%20custard%20mixture.%20The%20idea%20is%20to%20give%20the%20bread%20a%20good,%20brief%20soak,%20but%20not%20to%20overdo%20it.%20Fifteen%20seconds%20per%20side%20is%20recommended.%3C/p%3E%3Cp%3ECap'n%20Crunch.%20Insane,%20right?%20Each%20piece%20of%20toast%20gets%20a%20nice%20coating%20of%20crushed%20Cap'n%20Crunch%20cereal.%20It%20had%20been%20years%20(and%20years%20and%20years)%20since%20we'd%20eaten%20Cap'n%20Crunch.%20It%20tastes%20the%20same%20as%20we%20remember:%20sweet,%20sweet%20and%20more%20sweet.%20And%20that%20amazingly%20crunchy%20crunch.%3C/p%3E%3Cp%3EThe%20oven,%20not%20the%20stove.%20In%20this%20recipe,%20you%20coat%20a%20preheated%20baking%20sheet%20with%20a%20thin%20layer%20of%20oil.%20Then%20you%20lay%20the%20bread%20in%20the%20oil%20and%20bake%20the%20whole%20thing,%20flipping%20the%20toast%20once.%20Cooking%20it%20this%20way%20keeps%20the%20Cap'n%20Crunch%20from%20getting%20soggy%20or,%20on%20the%20other%20end%20of%20the%20scale,%20getting%20seared%20in%20the%20saucepan.%3C/p%3E%3Cp%3EWatching%20Drew%20make%20the%20French%20toast,%20the%20only%20slight%20downside%20of%20this%20recipe%20is%20the%20number%20of%20dishes%20it%20uses:%20two%20baking%20sheets,%20wire%20cooling%20racks%20that%20are%20cleaned%20mid-process%20for%20a%20second%20use,%20a%20bowl%20for%20the%20custard,%20a%20dish%20for%20the%20cereal,%20a%20plate%20or%20cutting%20board%20for%20the%20sliced%20bread.%3C/p%3E%3Cp%3EIt%20seems%20like%20a%20lot%20of%20dishes,%20but%20you%20can't%20argue%20with%20the%20results.%3C/p%3E%3Cp%3EThis%20is%20sinfully%20good%20French%20toast%20--%20definitely%20the%20best%20we've%20ever%20had%20from%20a%20home%20kitchen,%20and%20likely%20the%20best%20we've%20ever%20had%20in%20our%20lives.%20It%20more%20than%20delivers%20on%20crunch.%20And%20of%20course%20it's%20sweet%20(and%20even%20sweeter%20when%20doused%20in%20maple%20syrup).%3C/p%3E%3Cp%3EIf%20you're%20looking%20for%20a%20showstopper%20of%20a%20treat%20for%20an%20Easter%20brunch,%20you%20can't%20go%20wrong%20here.%20And%20if%20you%20want%20other%20great%20inspiration%20for%20Easter%20brunch,%20check%20out%20Our%20Best%20Easter%20Ideas,%20which%20includes%20both%20breakfasty%20brunch%20and%20lunchy%20brunch%20ideas.%3C/p%3E%3Cp%3EBut%20if%20your'e%20looking%20for%20a%20fun%20splurge,%20call%20the%20Cap'n.%3C/p%3E%3Cp%3ECrunchy%20French%20Toast%3C/p%3E%3Cp%3ECook's%20Country%20(April/May%202013).%20Recipe%20by%20Nick%20Iverson.%3C/p%3E%3Cp%3E(This%20photo:%20America's%20Test%20Kitchen)%3C/p%3E%3Cp%3EServes%206%20to%208%3C/p%3E%3Cp%3ENote%20from%20America's%20Test%20Kitchen:%20Day-old%20challah%20works%20best.%20To%20crush%20the%20cereal,%20po
