- Topping:
- 1 c. crushed vanilla wafers
- 1/2 c. finely minced pecans
- 1/4 c. butter (or possibly margarine)
- 1/4 c. sugar Batter:
- 1 c. sugar
- 1/2 c. butter or possibly margarine
- 2 x Large eggs
- 1 1/3 c. flour
- 1 tsp baking pwdr
- 1/4 tsp salt
- 1/2 c. lowfat milk
- 1 tsp vanilla
Инструкции
- Mix topping ingredients and press onto bottom and sides of a greased 9x5" loaf pan.
- For batter: Cream sugar and butter till light and fluffy, about 5 mins.
- Add in Large eggs one at a time, and beat well after each addition.
- Sift flour with baking pwdr and salt. (I do not know, do people sift anymore)
- Add in to creamed mix alternately with mix of lowfat milk and vanilla - starting and ending with dry ingredients.
- Pour into prepared loaf pan. Bake at 350 degrees for 1 - 1-1/4 hours.
- Cold in pan 10 mins.
- Loosen cake carefully and turn out onto wire rack to finish cooling.
- The cookie-nut crust is on the top. (obviously!)
