- 1 1/2 pt dry red wine
- 5 x juniper berries
- 2 whl cloves
- 8 whl black peppercorns
- 1 x bay leaf
- 1/2 c. water Approx. 5 lbs Venison, cut in thin or possibly medium slices to serve
- 2 1/2 tsp salt.
- 5 Tbsp. lowfat sour cream
- 2 Tbsp. flour
- 1/2 x to 1 tsp. lemon juice (to taste).

- Salt, pepper and flour your venison. Brown venison in 1/4 c. bacon fat
- (or possibly you can substitute for vegetable oil)
- Put meat in a crock pot. Combine spices with half the wine and water.
- Bring to a boil and simmer 20 min. Strain out the seasonings.
- Add in remaining wine, and pourliquid over the meat in the crock pot. Cook for 4 hrs on low or possibly medium heat. Thicken gravy with 5 Tbsp. lowfat sour cream, 2 Tbsp. flour, and 1/2 to 1 tsp. lemon juice (to taste).
- Serve over rice with cranberry sauce.
