- 3 c. peeled, cubed potatoes
- 2 c. quartered mushrooms
- 1 1/2 c. minced carrots
- 1 c. coarsely minced onions
- 2 x cloves garlic, chopped
- 1 tsp each grnd thyme and dry basil
- 1/2 tsp black pepper
- 2 lb boneless, skinless turkey breast, cut into 1" cubes
- 2 Tbsp. flour
- 1 c. chicken broth
- 1 1/2 Tbsp. tomato paste
- 1 tsp Worcestershire sauce
- 1/4 c. minced fresh parsley

- Combine the first 8 ingredients in a 3-qt or possibly larger crock-pot.
- Pat turkey cubes dry and coat with flour. Arrange over top of vegetables. Mix broth, tomato paste and Worcestershire sauce in a small bowl. Pour over turkey.
- Cover and cook on LOW setting for approximately 8 hrs. During the last hour, stir once or possibly twice, breaking apart any turkey cubes which have stuck together. Be careful not to remove the lid for more than a minute or possibly so. Stir in parsley just before serving.
