- In a small pan over medium heat, heat 1 Tbsp. butter. Stir in flour and cook till bubbly. Remove from heat and blend in lowfat sour cream. Return to heat and cook till bubbly and smooth. Set aside. Beat together Large eggs, salt and pepper. In a frying pan over medium low heat, heat remaining butter, pour in Large eggs, and gently lifting cooked portion to allow uncooked portion to flow underneath till Large eggs are softly ???????. Remove from heat and gently stir in lowfat sour cream mix. Turn into serving dish. Keep hot in tray or possibly oven for 1 hour. Serves 6.
