,%20it%20has%20that%20heavy%20cream%20that%20makes%20this%20an%20indulgent%20but%20super%20delicious%20pasta%20meal!%3C/p%3E%3Cp%3EWould%20you%20believe%20that%20I%20have%20lived%20in%20New%20York%20State%20pretty%20much%20all%20my%20life%20and%20never,%20until%20I%20moved%20to%20Albany,%20did%20I%20know%20that%20a%20delicious%20recipe%20such%20as%20this%20one%20existed?%20%20It%20is%20definitely%20an%20indulgent%20dish,%20but%20man%20oh%20man,%20it%20is%20ever%20yummy!%3C/p%3E%3Cp%3EThis%20post%20is%20a%20part%20of%20%23FoodieFridays%3C/p%3E%3Cp%3EWhen%20we%20first%20moved%20to%20Albany,%20we%20went%20to%20a%20neighbor%E2%80%99s%20house%20for%20a%20birthday%20party.%20%20They%20had%20chicken%20riggies%20there%20that%20had%20been%20bought%20in%20Utica%20(where%20the%20recipe%20hails%20from)%20and%20brought%20to%20home%20just%20for%20that%20party.%20%20I%20remember%20asking%20myself%20what%20on%20earth%20was%20so%20fabulous%20about%20this%20recipe%20that%20someone%20had%20to%20drive%20almost%202%20hours%20just%20to%20get%20some?%20%20Then,%20I%20tried%20the%20riggies%20and%20realized%20that%20one%20day%20I%20would%20have%20to%20figure%20out%20how%20it%20was%20made.%20%20Four%20years%20later%20I%20am%20finally%20making%20it!%20%20When%20I%20read%20there%20was%20heavy%20cream%20in%20the%20recipe,%20I%20knew%20that%20was%20what%20made%20it%20so%20decadent.%20%20This%20is%20definitely%20not%20a%20recipe%20for%20dieters%20but%20is%20a%20great%20occasional%20treat%20to%20have%20for%20that%20special%20occasion.%3C/p%3E%3Cp%3EI%20did%20a%20some%20web%20surfing%20and%20found%20recipes%20everywhere,%20from%20allrecipes.com%20to%20Food%20Network%20and%20all%20of%20them%20had%20different%20versions%20of%20the%20recipe.%20%20I%20ended%20up%20taking%20elements%20from%20a%20few%20different%20recipes%20to%20make%20this%20one.%20%20The%20recipe%20on%20Taste%20of%20Home%20called%20for%20you%20to%20marinate%20the%20chicken%20pieces%20in%20a%20sherry,%20oregano%20and%20garlic%20sauce.%20%20That%20was%20the%20only%20recipe%20I%20found%20that%20told%20you%20to%20do%20this.%20%20Rachel%20Ray%E2%80%99s%20recipe%20that%20uses%20roasted%20peppers.%20%20I%20really%20liked%20the%20idea%20of%20the%20roasted%20peppers%20so%20I%20decided%20that%20I%20would%20use%20the%20Taste%20of%20Home%20recipe%20as%20my%20base%20and%20instead%20of%20cooking%20the%20peppers%20on%20the%20stove,%20I%20would%20roast%20them%20as%20Rachel%20Ray%20suggested.%3C/p%3E%3Cp%3EIf%20you%20haven%E2%80%99t%20had%20Chicken%20Riggies%20before%20then%20it%20is%20a%20definite%20must%20try.%20%20You%20will%20not%20regret%20it.%20%20Yes,%20its%20a%20lot%20of%20calories,%20but%20make%20it%20a%20special%20occasion%20dish.%20%20Everyone%20will%20love%20you%20for%20it!%3C/p%3E%3Cp%3ECreamy%20Chicken%20Riggies%3C/p%3E%3Cp%3EAdapted%20from%20Taste%20of%20Home%20and%20Rachel%20Ray%3C/p%3E%3Cp%3EPublished%2010/07/2014%3C/p%3E%3Cp%3ECreamy%20tomato%20sauce%20with%20a%20slight%20heat%20from%20cherry%20peppers,%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMarinade:%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EMix%20together%201/2%20cup%20sherry,%20garlic,%20and%20oregano.%20Place%20chopped%20chicken%20in%20ziploc%20bag%20and%20pour%20marinade%20over%20top.%20Refrigerate%20at%20least%201%20hour.%3C/p%3E%3Cp%3EPlace%20peppers%20on%20a%20large%20baking%20sheet%20lined%20with%20tinfoil.%20Spray%20peppers%20with%20cooking%20spray%20and%20place%20under%20broiler%20on%20high.%20Roast%20peppers%20until%20they%20begin%20to%20char.%20Turn%20peppers%20over%20and%20continue%20to%20roast%20until%20charred.%20Remove%20from%20oven%20and%20immediately%20place%20in%20a%20ziploc%20bag.%20Let%20cool.%3C/p%3E%3Cp%3EHeat%20large%20skillet%20over%20medium%20heat.%20Add%201%20tablespoon%20olive%20oil%20to%20hot%20skillet.%20Remove%20chicken%20from%20marinade%20and%20add%20with%20onion%20to%20skillet%20and%20cook%20until%20no%20longer%20pink.%3C/p%3E%3Cp%3EIn%20a%20large%20stock%20pot,%20while%20chicken%20is%20cooking,%20cook%20your%20macaroni%20according%20to%20directions.%20Drain%20and%20place%20back%20in%20stockpot.%3C/p%3E%3Cp%3ERemove%20peppers%20from%20ziploc%20bag%20and%20remove%20skin%20and%20seeds.%20Slice%20peppers%20into%20bite%20sized%20strips.%3C/p%3E%3Cp%3EAdd%20peppers%20to%20chicken%20mixture%20along%20with%20tomato%20sauce,%20sherry,%20water,%20salt%20and%20pepper.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan%20over%20low%20heat,%20combine%20heavy%20cream%20and%20cream%20cheese%20and%20simmer%20and%20stir%20until%20cream%20cheese%20has%20melted%20into%20cream.%3C/p%3E%3Cp%3EAdd%20heavy%20cream%20mixture%20to%20chicken%20mixture%20and%20stir%20to%20combine%20well.%3C/p%3E%3Cp%3EPour%20chicken%20mixture%20over%20top%20of%20rigatoni%20and%20toss%20to%20coat.%20Serve.%3C/p%3E%3Cp%3EYield:%2012%20servings%3C/p%3E%3Cp%3EPrep%20Time:%2001%20hrs.%2030%20mins.%3C/p%3E%3Cp%3ECook%20time:%2000%20hrs.%2030%20mins.%3C/p%3E%3Cp%3ETotal%20time:%201%20hrs.%2060%20mins.%3C/p%3E%3Cp%3ETags:%20chicken,%20pasta,%20cream,%20
