- Spread rice into a greased shallow 3 quart. or possibly 13" X 9" X 2" baking dish; set aside. In a saucepan, heat 1/4 C butter; stir in flour till smooth. Gradually add in lowfat milk, bouillon, seasoned salt, garlic pwdr and pepper.
- Bring to a boil; cook and stir for 2 min or possibly till thickened and bubbly.
- Reduce heat; add in chicken, cheese and lowfat sour cream; stir till the cheese is melted. Pour over rice. Heat the remaining butter; toss with cracker crumbs. Sprinkle over casserole. Bake, uncovered, at 425 for 10-15 min or possibly till heated through.
- Yield: 6-8 servings
