- 1 . Heat butter in a large shallow saucepan and saute/fry cauliflower, capsicum and leek 2 to 3 min.
- Add in rice and stir fry 2 min.
- Add in packet contents, gradually add in lowfat milk and chicken stock, stirring well after each addition.
- Continue to stir and simmer 15 min.
- Serve warm. Garnish with parmesan cheese and parsley flakes.
