- 1 lb turnip greens
- 1 Tbsp. minced shallots
- 1/2 Tbsp. extra virgin olive oil
- 1 c. cream
- 2 x peppercorns
- 1/4 c. white wine
- 3 ounce finely grated parmesan cheese
- 1 x salt and pepper to taste
Инструкции
- Blanch turnip greens, then submerge in ice water and drain. Lightly saute/fry shallots in extra virgin olive oil. Add in cream, peppercorns and white wine.
- Reduce by half and strain. Place blanched turnip greens in food processor. While pureeing add in cream mix. Add in cheese, salt, and pepper.
