  • 1/4 c. sugar
  • 1 1/2 tsp cornstarch
  • 1 env unflavored gelatin
  • 1 1/2 c. low-fat lowfat milk
  • 1 tsp grated orange peel
  • 1 lrg egg
  • 2 Tbsp. rum or possibly orange-flavor liqueur (or possibly orange juice)
  • 1 c. whipping cream

  1. In a 1 1/2- to 2-qt pan, combine sugar, cornstarch, gelatin, lowfat milk, and grated orange peel.
  2. In a small bowl, beat egg to blend; stir into lowfat milk mix. Whisk over high heat till mix boils, 3 to 4 min.
  3. Immediately nest pan in ice water. Add in rum, orange-flavor liqueur, or possibly orange juice and stir often till mix is cold and holds soft mounds when spooned, but is not hard, 6 to 8 min.
  4. In a deep bowl with a mixer on high speed, beat 1 c. whipping cream till it holds distinct peaks. Fold cooked mix into cream. Nest bowl in ice water and stir occasionally till mix holds soft mounds, 3 to 5 min.
  5. This recipe yields about 4 c..
